Astronaut Noodle's Asteroid Cookies

1 cup butter, softened
1 cup packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup butterscotch chips
1 1/2 cups rolled oats
1 cup chopped pecans

With electric mixer, cream butter and sugars.  Mix in eggs and vanilla.  In separate bowl, sift flour, soda and cinnamon.  Add to butter mixture 1/2 cup at a time, mixing well after each addition.  Using a wooden spoon or spatula, stir in chocolate chips, butterscotch chips, oats and pecans.  Drop by heaping tablespoonfuls onto lightly greased baking sheets.  Bake at 350 degrees for 10-11 minutes, or until edges begin to turn brown.  Cool on cookie sheets for 2 minutes.  Using a spatula, transfer to cooling racks.  Cool completely.  Makes about 3 dozen large cookies.

Kenlyn Foster-Spence published her first poem at age 12.  She is a Phi Beta Kappa graduate of the University of Tennessee, Knoxville.  She holds a B.A. in psychology and she is currently pursuing a law degree.  Kenlyn is also the co-author of Painting the Paper Canvas: A Self-Editing Guide.  She is a featured speaker at writers' workshops and conferences.  She lives in Walland, Tennessee.
